Hello everyone! A couple days ago I made some chocolate cupcakes as part of one of my friends Christmas present. Okay, so technically they are just chocolate cupcakes but I tried to make them more Christmas-y when I decorated them.
Here is how to make these delicious cupcakes:
(Note: this makes 24 cupcakes so if you want to only make 12 half the ingredients)
Ingredients
Chocolate Cupcake
- 4tbsp Boiling water
- Medium eggs
- 165g Unrefined golden caster sugar
- 1 rounded tsp Baking powder
- 40g Cocoa powder
- 175g Butter (softened)
- 115g Self-raising white flour
Chocolate Icing
- 60g Butter
- 30g Cocoa powder
- 3tbsp Milk
- 250g Icing Sugar
Decorations:
- Gold and silver edible glitter
- Milk and white chocolate stars
Method
Step 1: Pre-heat the oven to 200 C / 400 F / Gas Mark 6
Step 2: Line a cupcake tin with paper cases. Then sift the cocoa powder into a bowl, pour in the boiling wter and make into a thick paste.
Step 3: Add the remaining ingredients and then mix with either an electric hand whisk or beat witha wooden spoon.
Step 4: Divide the mixture up equally between the paper cases and cook for about 10 minutes; mine took about 5 extra minutes on each batch so keep an eye on them after 10 minutes! The cakes should be well risen and springy to touch.
A good way to check if the cakes are done is to gently slip a knife into the middle of the cake; if it comes out clean they are done, if not put them back in the oven until the knife comes out clean.
Step 5: Once fully cooked place on a cooling wire wrack.
Step 6 - Making the Icing: To make the icing, melt the butter in a saucepan and pour it into a bowl.
Step 7: Sift the cocoa powder into the bowl and adding in a little at a time, mix in the icing sugar until it s glossy and spreadable. If the icing is took thick, add milk slowly into the bowl until it reaches the right consistency you wish.
Step 8: Use a palette knife (a normal knife will do) and spread the icing over the cakes once the cakes are cooled.
Step 8: Decorate if you wish using whatever things you want. I used edible glitter and milk and white chocolate stars to decorate them.
